Hōkaku Kappo: Rediscovering the Essence of Traditional Japanese Cuisine

The recently opened Hōkaku Kappo in Taipei originates from the Michelin two-star restaurant 'Shin Yashiki Happiness Theory' in Kumamoto, Kyushu. When I asked Chef Kenji Oda if the kappo style here differs by region, he replied, 'There is only the traditional Japanese, no other differences.' This statement reflects the stereotypes created by the distinct flavors of Edo cuisine in the Kanto region and the authentic taste of Kansai. Although claiming to be traditional, I can sense a hidden artistic beauty of creative cuisine that is elegant and pleasing to the eye.
